Puzzle Mania

Blog Prompt: Today is National Puzzle Day. What kind of puzzles do you like or dislike and why?

My husband and I love doing puzzles. After we get done with taxes every year, its like a release of tension and we will get a 1000 piece puzzle, lay it out and start putting it together. He will work on it a bit and then I will work on it. Depending on how difficult it is, we usually put one together in a week.

The thing of it is, we always set this puzzle up on the kitchen table and it gets in the way. I have a table on the lanai and I need flat surface to put out there to lay the puzzle pieces on . One of those card table fold up tops.



My fav puzzle right now was one that was all the dog breeds. That was fun to put togther. The ones with a lot of one color, I don't care to put them together. But, I will do it just to work my brain a bit more.

Pie Anyone?

Blog Prompt: Today is National Pie Day. Describe your favorite pie.

Wow, I have to pick??? I will list my fav pies, because I can't choose.

1. Key Lime Pie
2. Jefferson Davis Pie
3. Apple Pie
4. Pecan Pie
5. Silk Pie

Little trivia - Key Lime Pie is not suppose to be green. I found that out living here in Florida. So, I will share with you a great recipe for Key Lime Pie

KEY LIME PIE

  • 1/2 cup fresh lime juice (3 to 4 limes)

  • 4 teaspoons grated lime zest

  • 4 egg yolks

  • 1 - 14 ounce can sweetened condensed milk

  • 11 graham crackers

  • 3 tablespoons granulated sugar

  • 5 tablespoons unsalted butter, melted


It's easier to remove the lime zest from whole limes so I would start with that. Then I would cut the limes in half and squeeze out the juice being careful not to include any pits.

Put graham crackers in food processor to make into crumbs.


1. Whisk the egg yolks and lime zest together in a bowl until tinted light green. This takes about 2 minutes

2. Beat in milk, then juice and set aside at room temperature till it thickens.

3. Preheat oven to 325 degrees.

4. Mix graham cracker crumbs and sugar in another bowl.

5. Add butter and stir with a fork until well blended.

6. Pour this mixture into a 9-inch pie pan and press over the bottom and up the sides of the pan. Try using the bottom of a measuring cup to make sure the graham cracker mixture forms a firm crust on the bottom of the pie pan.

7. Bake on the center rack for about 15 minutes until the crust is lightly brown, remove and let cool to room temperature.

8. Pour the lime filling into crust, spread evenly, and then bake for 15 minutes until the center sets, but still wiggles when shaken.

9. Remove from oven and cool to room temperature.

10. Refrigerate for at least three hours until well chilled.

I like to add a bit of whip topping on top and I have used a premade crust in a crunch. There is also key lime juice you can buy. This sure is good in the summertime and when the key limes are in season.

Doggie Clothes and Layout

ernestcollarToday is Dress Up Your Pet Day. What would you like to see your pet dressed in and if you don't have one, what if you did?

I have a redneck boxer and I really don't think he would appreciate me putting any kind of clothes on him. Here's an example of what kind of dog he is.

He use to wear kerchiefs and one day he came in my office looking, oh so smug, and I noticed his scarf was gone. I knew at that very moment what he was saying to me. "Mom, it took of that blanky blank blank scarf you make me wear OFF! And you will never find it." He was right. I never found that scarf. He put it some where and I have tore this house apart. Knowing him, he put it in the trash.

The picture of him in a Halloween collar I made him, didn't last long either. He scratched and scratched at it. So I eventually took it off because of how it looked after all that scratching.

Fruitcake and New Year's Eve

Blog Prompt: Today is Fruitcake Toss Day. Have you ever eaten fruitcake? What are your feelings about it?

This won't take long.

FRUITCAKE IS NASTY!!!!!!!!!!!!!!

I hope everyone had a great New Years Eve and you got to ring it in with someone special.

My husband and I watched the very disappointing Georgia Tech game and then after that watched the most amazing motorcycle jump we have ever seen. Before he made the jump, we watched Dick Clark count down for the ball drop in New York. Bless His Heart! He does have a hard time counting after his stroke.

Back to the jump.

Robbie Maddison is a very young Evil Knievel and is famous for his jumps. This year he jumped the arch at the Paris Hotel in Vegas and I have a video showing this. Its worth a peek at it.
